My Husband’s Moulin Rouge Shrimp

My husband invented this wonderful easy dish using great salsa that my dear friend Angie sent me.

He made it again last night so I decided to share :)

Here is the recipe (as he wrote it – I only made a few small corrections).

John’s Moulin Rouge Shrimp:

(for two medium appetites)

15 – 18 medium shimp – cooked
2/3 cup Basmati rice
1 3/5 cup water or about that
1t salt
1 cup Willie B’s Texas Mild Salsa (we used mild)
3 – 4 green onions
3 cloves fresh chopped garlic
1/4 stick butter
3T Olive Oil
Creole Seasoning to taste… Maybe 1/4 t +?
Chopped Cilantro – about 2 or 3T
juice of 1/2 lemon or lime

Cook the rice with half the Olive Oil, water and 1t salt.

Cook olive oil, butter, onions, garlic and Creole Seasoning on medium heat.

After a few minutes add everyting else except the Cilantro, then turn to simmer.  Throw in the Cilantro just before serving.

Smother the rice to serve.

This recipe rocks the taste buds in less than 30 minutes, but is not over powering or expensive.  Garlic toast (a good sourdough or Chiabatta) goes great with it too!  The Texas salsa is key to balance the flavors – Everybody loves this dish.  Spice it up with a little more Creole seasoning if you take a notion.

Happy Mango Beads Contest – I won third place!

I won third place in the “On Second Thought Beading Contest” at Happy Mango Beads!

The rules were that we had to gather a pile of beads, create a piece of jewelry, dismantle it, and create another design using most of the beads.

The other most deserving winners were:
1st place – Dawn of Dawn April Jewelry
2nd place – Julie of Moonlight Shimmer

I just made my order using the gift certificate that I won – what fun!  I love their stuff!  They carry a wonderful selection of handcrafted beads from all over the world!

I ordered some African trade Christmas beads, some very cool glass beads completely handcrafted in the Czech Republic, a Tibetan pendant, little bitty adorable pottery mugs from Mexico, some carved bone beads and more!

Here was my first design

Here is my second design

Thanks Happy Mango Beads!
